Why Paying with the Health 2+ smartwatch is not possible:

The Health 2+ smartwatch offers a wide range of features, but supporting contactless payments is unfortunately not one of them. This is because the Health 2+ does not include an NFC chip, an essential component required for making payments via a smartwatch.

What is an NFC chip?

Why no NFC in the Health 2+?

To optimize cost and battery performance, it was decided not to include an NFC chip. This means that while the Health 2+ is an excellent companion for your fitness goals, it cannot make payments.
